You Say Zucchini, I Say Squash….Let’s Call the Whole Thing Dinner!

We had leftover gazpacho from the night before, but needed a little something to fill us up and not have us craving pizza at 9:00 at night. (oh wait, Dan does that anyway!)

I came across this recipe for zucchini pasta.  So, I basically followed the recipe as is except substituted patty pan squash for the zucchini.  It was a great substitution and dinner was fantastic!!
