Gruyère soufflé with sofrito

A basic soufflé…  Gruyere chunks folded in conjunction with the béchamel.   3 butter, 2.5 flour, 1 c milk and 4 eggs.  Salt.  Pepper.

Sauce, sautéed red onion, garlic, tomato, red pepper, jalepeno, parsley, salt and pepper.

A little cilantro might work better for the sauce, but the parsley gave it a nice parsley flavor.
