In honor of long gone, but long appreciated Don Carlos, whose might menu pulled us to this county with their World Famous Speedy Burrito, and magnificent mole enchiladas. The Don held his own with any of the best Taqueria around.
It was the fifth of may, and all throughout the land of Endicott, southwestern food was had. The elders dined of seasoned stewed beef with roasted vegetables on toritillas with dad’s renowned guacamole.
We settled for straight up, plain Jane, bean and cheese — a highly unusual combination, as documented! No berries, no mango, kale nor squash. Just plain old bean and cheese enchiladas, and the children rejoiced!
