Damn the tomatoes! Zucchini ahead!
These didn’t really turn out flaky, but they weren’t pasty as sometimes biscuits can be. Consumately consumable, definitely delectable, and a great way to sneak zucchini past the kids: One had three even after we let the chinchilla out of the bag. (Actually, one had one, two had three and three had half.)
These are certainly tall, fluffy and tender and the herbs and zucchini make them far more interesting than a basic biscuit. It might be interesting to manipulate the dough ala the scallion pancakes to try for a flakier biscuit.
Cut in the shape of hearts, the biscuits baked into something more akin to E.T., making them even better yet.
