Zucchini quesadilla

Supremely easy quick lunch or dinner, with red pepper, onion and faux-veeta.

A bit of a coconut flavor and just a hint of nutritional yeast, the cheese has a nice flavor, melted.  Cold it is a little soft for eating and won’t shred well.

    1. Just thinly sliced zucchini, red pepper and onion tossed on a layer of the cheese spread then browned on both sides.
