Mom’s famous tetrazzini

Quick-n-easy, tetrazzini:

Mom gives credit to Mir.  This may be like everybody’s Grandmas’ famous quick rolls.

One big, roughly chopped onion, sauteed until soft and beginning to caramelize, then, add 6 cloves minced garlic and chow for a few minutes.  Add in lots of sliced mushrooms, celery and water chestnuts, and cook the mushrooms down a little.

  Add protein, cream of mushroom soup a little soy sauce and enough water or broth to get the desired consistency. 

Serve over pasta with sliced (toasted!) almonds and red pepper flakes.

Using a bechamel with a shot of wine or whiskey instead of cream of mushroom greatly reduces the salt and lets the soy through a bit better.
