Meant initially to be stuffed with melongene and sun dried tomatoes, principally, inspection of that — found it rotted. Spotted for relief: inserted mushroom, avocado and sprout. Without a doubt, it turned out very visually appealing:

Bringing this together was the base mushroom layer, sautéed with a little lemon and tarragon until juices evaporated. Elevated over those, then, thin slices of avacodo on which was scattered carmalized shallots, capped with a healthy mound of sprouts and mozzarella cheese. These “cheese” seem to be mostly only edible when melted, but they are very good when that.
