This was Jen’s favorite, followed closely by the steamed buns.
Initially, sauteed, curried chick peas were going to be included but after chopping the snow peas, carrots, mandarin oranges and then tossing the peanuts on top, that felt too heavy. The carefully, cleverly, contrived accompanying coulis was also pitched in favor of a simple thickened broth.
Good thing: These were fantastic, served with a bit of sweet chili sauce.
- Several broad, whole lettuce leaves
- 3/4 c chopped raw snow peas
- 1 large carrot, matchstick sliced
- 1/2 c chopped mandarin oranges
- 1 tsp finely sliced ginger
- 2 Tb veggie broth
- 1tsp corn starch
- 1/3 c peanuts
Mix the broth and starch. Chop vegetables and fruit, throw in a pan with the broth and chow for a couple of minutes — just to warm the veggies through. Mix in peanuts and serve.
Pile the combination on a leaf of lettuce with a little sweet chili sauce, roll or eat like a lettuce taco.
