Jen thought that slapdash mordecai looked pretty good so we made another meal of it but this time, we fancied it up with Lentinula edodes.
We also had not kasseri, instead using swiss and provolone and, cooked the juices down a bit further. The shitakes were good but the other changes did not improve the sandwich. Stick with the kasseri and don’t cook the juices down too far. Also, very good with a nice bottle of wine.
