Tofu cutlet

Serial breakfasts are such a bore we often try to hash something new together…

The other day I was in the mood for eggs benedict but since we are studiously avoiding eggs, hollandaise sauce and ham I was left with what was in the fridge and what was, was curd.

Said curd was sliced into a slab and well drained before being flash seared on all sides.

As the bean curd bronzed, I sauteed a minced clove of garlic in a little butter with a few (a lot) cayenne pepper flakes then added about 1/2 cup veggie broth, sprinkled with corn starch and seasoned with pepper/garlic/salt.

Upon the tofu monolith was layered sliced avocado what was then slathered with sauce and topped with chopped spinach.

Voila.  Tasty a.m. repast.
