Back in the Kitchen with Black Bean Chimichangas

Yes, it’s been a while….a long while since we’ve posted recipes here.  It’s not that we haven’t been cooking – we have – but either it wasn’t worth mentioning or we forgot to take a picture!

The other night, I set out to make black bean burgers using a recipe I found online at What’s For Dinner? .  The mixture didn’t quite come together enough for us to believe they would cook up as patties…..and…..they didn’t.  We felt it would be such a waste to throw out the mixture so we tucked it away until inspiration hit us.

A few days later, we decided the mixture would make a great filling for burritos.  And then took it one step further and fried the filled burritos to make them crunchy – hence – chimichangas!

I whipped up some guacamole and pico de gallo…..and these were phenomenal!  The recipe for the black bean mixture definitely makes a great filling….but not a great burger.

Black Bean Burgers (*ahem* – chimichanga filling)

  • 2 (16 oz) cans black beans – well drained and rinsed
  • 1 small onion coarsely chopped
  • 1 tsp garlic powder
  • 1/2 cup rolled oats
  • 1 egg

Blend all ingredients in a food processor till smooth.  Fill a corn tortilla, roll up and fry in a bit of canola oil till brown on both sides.  Serve with your favorite toppings.
